A tough blend of Cabernet Sauvignon and Cinsault. The wine is deep red in color and has aromas of blackberries, black currant, cedar and grilled paprika. The attack is full of fruit and soft, with supple tannins and sufficient freshness, followed by a spicy finish.

 

The Cinsault grapes come from a bush vine vineyard overlooking False Bay. The vines are about 35 to 40 years old. It is located about five miles from the ocean and produces very low yields due to its age and because the vineyard is non-irrigated. The Cabernet Sauvignon vineyards also overlook False Bay and are 10 to 15 years old. The Cabernet Sauvignon was crushed and slowly fermented, using the natural yeast from the vineyard. He only received a maximum of two tattoos (immersion of the solids) or remounts (flooding of the must) per day to avoid over-extraction. The Cinsault underwent a three-day carbonation in full state after which it was treaded twice a day by foot to gently extract the best juice over a longer period of time. The two varieties were matured nine months apart; the Cinsault in older 600 l barrels and the Cabernet Sauvignon in 225 l barrels without new oak. The wine was then blended in older 600L barrels and aged for another year before bottling. The wines only receive a basic filtration before bottling.
