The Sauvignon loves the coolness of the nearby ocean, which is located a short distance from the vineyards. The vineyards are located on the typical soils of De Kaap, an alternation of river pebbles and weathered granite, which gives the grapes a lot of aroma. As with the other Signature wines, a selection of special vineyard blocks is made for the Sauvignon Blanc, which gives the wine its special quality. The grapes undergo a short contact with the skins upon arrival to give them more flavor. The wine is fermented in the tank, and also aged in the tank, to preserve all the fruit. The best tanks are selected for the final blend. A three-month maturation in yeast cells gives it extra strength and character, resulting in a delicious, sparkling Sauvignon Blanc.
