Spier's Seaward wines are made from selected grapes grown in South Africa in the best coastal wine regions, located up to 25 km from the Atlantic coast and the waters of False Bay. In the warm summer months, the cooling sea breeze ensures that the grapes can ripen "at ease" for a longer period of time. The Chenin Blanc vineyards are planted in Swartland, north of Cape Town. This soil on which the grapes grow mainly consists of Hutton. This soil type is a completely extensive form of granite that retains moisture well. The Dryland vines provide a low yield of grapes with more complexity. The grapes are harvested by hand. Before the grapes are sorted by hand, destemmed and crushed, the grapes are cooled. The peel contact takes place for four hours. 50% of the juice is fermented in 300 liter French oak barrels. The remainder is fermented in stainless steel tanks. The wine is aged on the lie for six months before bottling.
