Danie de Wet also owes his success with his special wines based on Chardonnay to many innovations he has implemented. One of these is ripening the Chardonnay on the lie, so on the dead yeast cells. These yeast cells eventually mix with the wine, making it rounder and more powerful. This wine ages on its own from February to August. The condition is that the grapes that have been used are perfectly healthy, but you can leave that to De Wet. The grapes come from beautiful stony, chalky slopes, from its special domain, which excels in Chardonnay grapes. These provide a distinctly fresh and mineral character, which is nicely accentuated by the aging on stainless steel, without any form of wood aging. This way it remains beautifully pure and juicy, delicious to drink, due to its special white fruit in combination with a fresh citrus note, supported by a lot of strength and concentration.
